Mushroom Pasta Noodles

Who doesn't love a delicious and filling plate of pasta?

With king oyster mushrooms and a peeler - you can make delicious "pappardelle" like noodles for your next pasta craving. This wasn't a deliberate move to eat "low carb" or eat like we're on a diet - we just want to be able to sneak in move vegetables in our meals without having to overthink it.

I'm personally not a fan of zucchini noodles because of the texture but eating these mushroom "noodles" really does almost feel like you're eating regular pasta. Our kids will even eat this! We give them a smaller serving and they enjoy it.


1. Peel large oyster mushrooms with a peeler to create large strips.

2. Saute over medium heat in a little olive oil. Season with salt and pepper.

3. Serve, layer on pasta sauce and garnish and enjoy!
